Ingredients:
1 egg 4 egg whites
1 tbsp fat-free sour cream
2 oz cooked, smoked, or canned salmon
1 tbsp fresh basil
1 tbsp scallion, chopped
Pinch of dried parsley
Pinch of pepper
Instructions:
Beat eggs and pour them in a heated skillet. When the omelet
hardens, place salmon on top.
Top salmon with sour cream and sprinkle with basil,
scallion, parsley, and pepper. Fold in half and cook until done.
